At a lack

for words that is. Nothing really newsworthy of late. I guess that can be a good thing.  We are enjoying the warmer weather and being able to get outside and soak up the sun.  Jake and I bought a beach ball today, it’s all yellow with a smiley face on it. He also had to have some cool shades to go with.  My boy is ready for summer and swimming!  And so am I.

One thing I will leave you with is a great recipe I tried recently. It has such good flavor, is low fat and super easy.

Pesto Chicken

3-4 boneless chicken breasts

Classico Sun dried tomato pesto (small glass jar near the spaghetti sauce in the grocery)

Breadcrumbs

Provolone Cheese

Take chicken breasts and dredge in breadcrumbs. Lay in a small baking dish, so they are touching. Top each breast with 1-2 tablespoons of pesto. Top each with a slice of provolone cheese. Cover pan with foil. Bake for 40 minutes at 350 degrees, take foil off and bake an additional 10 minutes, so cheese can brown. Enjoy!
